Butternut squash, lentil and feta salad

Lentils are rich in potassium making them a great choice for your heart ! The earthy flavour of them are balanced so well with the sweetness of the butternut and pomegranate! Give it a go!

Ingredients

1 butternut squash 1 red onion

1 pack of puy lentils ½ bag of spinach

3-4 radishes

3-4 spring onions

1 tbsp olive oil

30g Feta cheese

Method


1. Preheat the oven to 200.C/fan 180/Gas 6.


2. Prepare the butternut squash by peeling it and discarding any pulp and chopping it down into small cube size pieces, do the same with the red onion. Drizzle with olive oil season and roast for 30 minutes.


3. Slice the radishes thinly using a mandoline and then slice your spring onions, set aside.


4. cook the lentils according to the instructions on the package. The once the squash is done, add this to the lentils along with all the other ingredients and mix well.


5. Finish by crumbling in the feta and drizzling over balsamic vinegar.
