During those colder months I always like to cook a warming, cosy soup. Butternut squash soup is a staple and only requires a few ingredients.
Ingredients
1 x butternut squash
1 x white onion
1 x clove of garlic
Chilli flakes
800ml stock (chicken or veg)
2tbsp of Crème Fraîche Method
1. Heat the oven to 200C/180C fan/gas 6.
1. Peel and chop the butternut squash and onion into medium sized cubes and transfer to a roasting pan. Crush the garlic clove with the back of a knife and also add to the pan. Drizzle with olive oil, season and roast in the oven for 30/40 minutes.
2. Once cooked transfer the ingredients to a food processor adding also the stock and crème Fraîche and blend until you have a smooth consistency (you can also use a hand mixer)
3. Finish with a sprinkle of chilli flakes for an added kick. Enjoy x
