cauliflower rice is such an easy swap from regular white rice. It’s also a good way of increasing your vegetable intake. If you don’t have a food processor, you can use a box grater to grate down the cauliflower.
Ingredients
1 cauliflower 1 tbsp olive oil
seasoning
Method 1. Chop down the cauliflower into small florets, discarding the core and leaves.
2. In batches add the florets to a food processor until it resembles small grains.
3. Add the blitz cauliflower to a heated pan with with olive oil and cook for 8-10 minutes until the cauliflower is cooked through.
If you wish to turn this into cauliflower egg rice, crack two eggs into the pan once the cauliflower is cooked and mix in to the cauliflower.
