Comforting Hake with Butterbeans, spinach & Ricotta.

I love this dish, it's so comforting and balanced. When I make food not only do I wish for it to be de delicious but I think how can this be balanced. Does it include sources of healthy fats, protein, complex carbohydrates and vegetables. This recipe ticks all those boxes!

Ingredients (serves 2)

olive oil

2 shallots, finely sliced

1 garlic clove, diced

1 tsp dried thyme

1 x 400g tin quality chopped tomatoes

A pinch of sugar

1 can of butterbeans

2 x fillet of hake (or any white fish)

A handful of fresh basil, roughly chopped

3 big handfuls of spinach

2 tbsp ricotta cheese

Pinch of nutmeg (optional)

Juice from 1/2 lemon

Parmesan, to serve

Method

1.Heat a pan with a drizzle of olive oil over a medium heat. Add the shallots and cook until softened, then add the garlic and fry for a further 1 minute. Pour in the chopped tomatoes, thyme and pinch of sugar. Bring to the boil then simmer for 5 minutes. Then stir in the butter beans with half of their liquid. Bring to boil and simmer.

2.Meanwhile, wilt the spinach down in a pan, once wintered try to squeeze out as much excess water as you can. Chop the spinach up finally and in a bowl add the spinach, ricotta and nutmeg and stir to combine. Set aside.

3. In the tomato mix, make a little bed and add your fish and put the lid on. Leave it to cook for 10 minutes or so until the fish is cooked.

4. Dollop over the spinach and ricotta mix, sprinkle the chopped up basil and finish with a grating of Parmesan cheese, drizzle of olive oil and season to taste.

5. Enjoy!
