With only a few ingredients this soup is a comforting winter warmer. Especially in the darker months, mushrooms provide a source of vitamin D.
Serves 4
Ingredients
1 tbsp butter 2 medium onions, dices
1 garlic clove, crushed
500g mushrooms, finely chopped (chestnut or button mushrooms work well)
2 tbsp plain flour
1l hot chicken stock
1 sprig of thyme
1 bay leaf
2 tbsp crème fraîche (single cream would also work well)
Method
1. In a large saucepan heat the butter and cook the onions and garlic until soft but not browned.
2. Add the mushrooms along with the sprig of thyme and cook until softened. Once soft sprinkle over the flour and stir to combine. Add the bay leaf, pour in the chicken stock, bring the mixture to the boil, simmer for 10 mins.
3. Remove and discard the bay leaf and thyme, then remove the mushroom mixture from the heat and blitz using a blender or a hand blender until smooth. Add the crème fraîche and check for seasoning. Gently reheat the soup and enjoy.
