Fresh tomato, cucumber, feta and chickpea salad.

This easy, quick salad is super fresh and tasty. It’s perfect to have on its own for a quick lunch or dinner, otherwise increase the quantities and serve as a sharing side salad.



Serves 2 Ingredients 1 x can of 400g Chickpeas 1 lemon 1 tbsp olive oil 1tsp paprika ½ cucumber handful of cherry tomatoes ½ red onion 30g Feta cheese





Method 1. Preheat the oven to 200.C/fan 180/Gas 6. 2. Drain the chickpeas and coat in olive oil, paprika, salt and pepper. Put in the oven and roast for 20-30 minutes until golden. 3. Dice the cucumber, red onion, and tomato. 4. Once the chickpeas are ready, add to salad bowl along with the other ingredients and mix together. 5. Finish by crumbling in the feta and adding a squeeze of lemon.
