Mackerel pâté on rye.

This is packed with protein and B-12 but also it’s really quick to make and satisfying!

Ingredients


For the pâté


1 pack of smoked mackerel fillets

Juice of one lemon

2tbsp of crème fraîche

Sprig of dill

Rye bread

For the pickle


Cucumber

Radishes

100ml white white vinegar

100ml water

Tbsp white sugar Method 1. In a food processor (I used a nutribullet, but a hand blender would also work) blitz the mackerel fillets, dill, creme fraîche and lemon juice together until smooth. 2. In a small pan on a medium heat add the white wine vinegar, water and sugar. Add the sliced cucumber and radishes. Bring it up to boil, simmer for 5 minutes and drain. 3. Top your rye bread (a ryvita would also work well) with the pate and pickled vegetables and enjoy.
