High in omega 3 this dish is tasty but also super quick! I hope you enjoy it!
Serves 2 Ingredients
2 salmon fillets
handful of cherry tomatoes
1 tbsp olive oil
150g of orzo (or whatever pasta you fancy)
pinch of salt
thumb size piece of parmesan.
For the pesto sauce
whole packet of basil
1 avocado
handful of walnuts (approx)
1 garlic clove
1 tbsp olive oil
Juice of one lemon
pinch of salt Method 1. Preheat the oven to 200.C/fan 180/Gas 6.
2. In a roasting pan add your salmon fillets, drizzle over the olive oil, season and scatter over the halved cherry tomatoes.
3. In a food processor add all the pesto sauce ingredients, and blitz until a smooth consistency. Set aside.
4. Bring a pan of water to boil adding salt, and cook the pasta until cooked through, drain. Stir in your pesto sauce to the cooked pasta until the pasta is completely coated.
5. Once the salmon and tomatoes are cooked place on top of the pesto pasta and finish with some grated parmesan.
