Soy, ginger, salmon and cauliflower rice bowl.

A delicious well balanced meal including, protein, carbohydrates, fat and vegetables.


Serves 2


Ingredients

2 x salmon fillets

Tenderstem broccoli

Green beans

Edamame beans

Cauliflower rice

soy sauce

Thumb size piece of ginger


For the dressing


Thumb size piece of ginger

1 x garlic clove

1tsp honey

1tsp Chinese rice vinegar

6tsp soy sauce

1tsp sesame oil



Method


1. Preheat the oven to 200oC, gas mark 6.


2. Marinade the salmon fillets in soy sauce, sesame oil and grated ginger, set aside for 5 minutes.


3. Cook the salmon fillets in a roasting dish for 15 minutes.


4. Grate down your ginger and garlic using a microplane, add to a jar along with the other dressing ingredients and shake well.


5. Boil the broccoli and beans. Once the salmon is cooked add to your bowl along with the other ingredients (for cauliflower rice recipe follow this link here) and finish by drizzling over the dress.
