Ingredients 1 sweet potato diced
1 red onion only 1/2 if it's a big red onion
1 pepper deseeded and diced
1 head of lettuce gem
Big handful of spinach leaves Sunflower seeds Dried cranberries
20g of feta crumbled
For the dressing
Juice of 1 lemon
1tbsp of tahini
1 tbsp of maple syrup (add more if it needs more sweetness)
pinch of salt
Glug of olive oil (add more if you need to make the dressing thinner)
1 clove of minced garlic
Method
1. Preheat the oven to 200.C/fan 180/Gas 6. Drizzle oil over your diced sweet potato and cook for 20 minutes or until the potatoes are soft.
2. Dice down the red onion and pepper, and chop the spinach and lettuce gem.
3. For the dressing add all the ingredients to a jar and give it a good shake until it has emulsified.
4. once the sweet potato is cooked, add all the ingredients and dressing to a bowl mix well. Enjoy!
